If you thought fondue had gone the way of polyester leisure suits, think again. Cooks have rediscovered the classic fondue au fromage, a suave and compelling blend of cheese, wine, and cherry brandy. Also returning are creamy chocolate fondues, served with chunks of moist pound cake or sliced fruit. What's not back are those dull parties serving nothing but fondue. Today's cheese fondue is a main dish served with suitable sides, and chocolate fondue is best served as a festive dessert to an otherwise fondue-free meal. So check out our recipes for the classics and prepare to welcome them back with open arms. Let's just hope leisure suits aren't on the horizon.
